
The Hoxton Vienna has set a culinary highlight with its new restaurant, Bouvier, which enriches Vienna's gastronomy scene.
Under the leadership of renowned restaurateurs Jeremiah Stone and Fabian von Hauske Valtierra from New York, the venue offers a modern interpretation of French bistro cuisine. The opening in April was highly anticipated, and interest has been enormous: the restaurant was overbooked in its first few days, placing the service under pressure. The menu features creative dishes such as wild boar saucisson, smoked fish salad with eel and trout, steak tartare, and the famous "La Grande Gougรจre," filled with Mornay sauce and black truffle. Bouvier is known for its XL gougรจres and solid classics like the cheeseburger with cheddar and onion, as well as moules-frites in white wine sauce.
